Fried Squash and Zucchini Rounds

Ingredients

2 yellow squash, or zucchini ¼ cup arrowroot 1 tablespoon onion flakes 1 ½ teaspoons garlic powder ½ teaspoon sea salt ½ teaspoon ground black pepper ¼ teaspoon nutmeg ⅛ teaspoon cayenne pepper 2 eggs 3 tablespoons lard, bacon drippings or tallow

Instructions

1. Chop the squash and/or zucchini in ¼ inch rounds.

2. Using a whisk or fork, mix arrowroot and all spices in one bowl. Beat the eggs in another bowl. Add lard to frying pan to heat.

3. Submerge each squash round in egg wash and then dredge in the arrowroot/spice mixture.

4. Pop the dredged squash in the frying pan. Do not crowd the pan.

5. Fry until golden brown on either side.

6. Lay on a plate lined with a paper towel.
