Garbanzo Patties

Ingredients

4 cups cooked chickpeas ½ cup fresh mint leaves ¼ yellow onion 2 teaspoons minced garlic 1 ½ teaspoons sea salt, or to taste 2 teaspoons cumin 2 tablespoons paprika ½ teaspoon ground black pepper, to taste 2 tablespoons water ¼ cup arrowroot, or flour of choice 2 tablespoons extra virgin olive oil, more as needed

Instructions

1. Preheat oven to 375F if using, or set grill to medium-high heat.

2. Drain and rinse chickpeas, if needed. Finely mince the mint leaves. Peel and finely mince onion.

3. Place mint and onion in bowl of food processor. Add all the ingredients except for arrowroot and oil.

4. Process until a paste has formed. Scrape down sides with spatula as needed. The mixture can have some larger pieces of chickpea remaining but should be mostly blended.

5. Turn mixture into a mixing bowl and add arrowroot. Stir to combine thoroughly. Using your hands, form mixture into large patties - 1 per serving.

6. Cook on the grill set to medium high heat, or to cook on stovetop, heat oil in skillet on medium-high heat. For either method, cook 3-5 minutes on the first side.

7. Flip and cook for 3-5 minutes on the other side until cooked. They can also be baked on an oiled baking sheet for 25-30 minutes, gently flipping halfway through.
