Garlic and Lemon Roasted Cauliflower

Ingredients

¼ cup extra virgin olive oil 1 head cauliflower 8 cloves garlic 2 teaspoons lemon zest, preferably fresh ⅛ bunch fresh parsley ¼ teaspoon sea salt ¼ teaspoon freshly cracked black pepper

Instructions

1. Preheat oven to 450F.

2. Melt oil. Wash cauliflower and cut into florets. Peel and crush garlic. Zest lemon. Chop parsley.

3. Place cauliflower in a casserole dish. Toss the oil with cauliflower in the casserole dish. Toss with lemon zest, garlic, salt, and pepper to coat well.

4. Roast for 25-35 minutes, stirring once half way.

5. Remove from oven and toss with fresh parsley.
