Gluten Free Fudgy Brownies

Ingredients

parchment paper ½ cup coconut oil, plus more for greasing ½ cup extra virgin olive oil 1 ¾ cups cane sugar, or maple sugar 3 large eggs 1 ½ teaspoons vanilla ¾ teaspoon sea salt ⅔ cup cassava flour 1 ½ cups cocoa powder ½ teaspoon baking soda ¾ teaspoon cream of tartar ¾ cup chopped walnuts ¾ cup dark chocolate chips

Instructions

1. Preheat oven to 325F.

2. Grease a 9x13 inch pan, line with parchment paper, and then grease the parchment paper. Alternatively, use a silicone pan.

3. In a medium bowl, whisk together coconut oil, olive oil, sugar, eggs, vanilla, and salt until smooth.

4. In a small bowl, mix together cassava flour, cocoa powder, baking soda, and cream of tartar. Add flour mixture to egg mixture, and stir to form a smooth batter.

5. Fold in walnuts and dark chocolate.

6. Spread batter evenly over prepared pan. Bake for 15 minutes. Remove from oven and let rest for 10 minutes. Add back to the oven and cook for another 15 minutes.

7. Cool, cut into squares, and enjoy!
