Grain Free Sunbutter and Jelly Bars

Ingredients

For the bars: 1 tablespoon avocado oil, for greasing 2 tablespoons ground flaxseed, optional 6 tablespoons water, optional 2 eggs, optional ½ cup sunflower butter ½ cup tapioca flour ¼ cup honey ¼ cup cane sugar ½ teaspoon sea salt ¼ teaspoon baking soda For the filling: 1 cup strawberries, or blueberries 1 ½ teaspoons gelatin 1 tablespoon honey

Instructions

1. For the bars: Preheat oven to 350F. Grease a 7x11 inch baking pan.

2. If using flax in place of eggs, mix flax with water and allow to sit for 15 minutes.

3. In a large bowl combine all of the bar ingredients. Beat until well mixed.

4. Spread half of the dough into the greased pan.

5. For the filling: If using frozen fruit, allow it to defrost and drain.

6. Blend the filling ingredients in a blender until pureed. Pour the filling over the dough in the pan. Spread.

7. Pour the remaining half of the dough on top of the filling.

8. Bake for 40 minutes.

9. Allow to cool. Cut into bars.

10. Store in the refrigerator for up to two weeks or in the freezer for up to one year.
