Greek Chicken Burgers

Ingredients

10 ounces frozen spinach 3 green onions 1 ½ tablespoons extra virgin olive oil 1 tablespoon minced garlic 1 pound ground chicken 1 teaspoon dried oregano ¾ teaspoon dried basil 1 teaspoon sea salt, to taste ¾ teaspoon ground black pepper ⅛ cup tzatziki

Instructions

1. Defrost spinach.

2. Remove excess liquid from defrosted spinach by placing it in a colander and pressing firmly with the back of a spoon. For an even drier result, wrap the spinach in a lint-free towel and squeeze out the moisture.

3. Mince spinach. Chop green onions.

4. In a sauté pan, heat oil to medium heat.

5. Add garlic and green onions and sauté for about 2 minutes to release the flavors. Do not let the garlic brown. Remove from heat.

6. In a mixing bowl, combine all remaining ingredients, except tzatziki. Form into patties.

7. Grill or sauté burgers on medium heat until cooked through (internal temperature should be a minimum of 165F). Serve topped with tzatziki.
