Greek Rice with Lemon, Spinach, and Dill

Ingredients

1 cup brown rice 1 ½ cups chicken broth ¼ onion 1 ½ tablespoons fresh dill 12 ounces spinach 2 tablespoons extra virgin olive oil ⅓ teaspoon sea salt, or to taste ¼ teaspoon ground black pepper, plus more to taste ½ lemon

Instructions

1. Cook rice in chicken broth until light and fluffy.

2. Peel and mince the onion. Mince dill. Roughly chop the spinach.

3. Meanwhile, in a pan over medium high heat, sauté onion in olive oil, salt and pepper until translucent.

4. Add chopped spinach and dill and cook until the greens are just wilted.

5. Stir rice into spinach mixture. Squeeze lemon on top and stir; add additional salt and pepper to taste, and serve.
