Green Soup

Ingredients

1 onion 1 cup frozen peas 4 cups water 1 bunch kale 4 handfuls dried wakame ¼ cup miso paste 1 lemon ¼ cup tahini paste coconut aminos, to taste

Instructions

1. Peel and chop onion. Wash and chop kale into bite-sized pieces. Juice the lemon.

2. Place onions and peas in a medium saucepan, cover with filtered water, and bring to a boil.

3. Add the dark leafy greens and dried seaweed. Steam/blanch briefly until greens are emerald in color.

4. Use an immersion blender or counter top blender to puree the contents of the pot (including liquid), plus miso and lemon juice until smooth.

5. Spoon into bowls, top with tahini and coconut aminos – serve immediately.
