Grilled Coffee Rubbed Flank Steak

Ingredients

2 tablespoons instant coffee, or finely ground dark-roast 1 tablespoon chile powder 1 tablespoon smoked paprika 1 tablespoon coarse sea salt 1 teaspoon cumin 1 teaspoon ground coriander 1 teaspoon onion powder 1 teaspoon garlic powder 1 teaspoon dark brown sugar 2 pounds flank steak

Instructions

1. In a small bowl, mix the coffee, chili powder, paprika, salt, cumin, coriander, onion and garlic powders, and sugar.

2. Liberally coat the flank steak with the rub, patting with your fingers so it adheres.

3. Preheat gas or charcoal grill to medium-high heat.

4. Grill the steak for 4-5 minutes per side for medium doneness. Make sure internal temperature is 145F. Remove from the grill and let rest for at least 15 minutes.

5. To serve, slice steak against the grain.
