Grilled Greek Chicken Skewers

Ingredients

For the marinade: 1 tablespoon fresh parsley 1 tablespoon fresh oregano 1 sprig fresh rosemary 2 cloves garlic ¼ cup extra virgin olive oil 1 ½ lemons ⅓ teaspoon sea salt, or to taste ½ teaspoon ground black pepper For the chicken skewers: 2 lemons 1 ¼ pounds chicken breasts 6 skewer sticks 3 ounces cherry tomatoes, or grape tomatoes 1 teaspoon cooking spray

Instructions

1. Prepare the marinade: Chop parsley. Chop and then crush oregano and rosemary. Peel and roughly chop garlic.

2. Zest half of the lemons and juice all of the lemons.

3. Place marinade ingredients in a large jar and seal with a tight-fitting lid. Shake vigorously to combine and set aside.

4. Prepare the chicken skewers: Halve lemon. Chop chicken into 1 inch cubes.

5. Place chicken breast cubes in a large glass bowl and pour the marinade on top.

6. Gently toss to combine, ensuring the chicken is evenly coated on all sides. Cover and place in the refrigerator for 30 minutes to one hour.

7. While chicken marinates, soak skewers in water for 20-30minutes if using wooden ones.

8. Remove chicken from the refrigerator 15 minutes before cooking. Drain and discard the marinade.

9. Thread a tomato onto a skewer, followed by two pieces of chicken. Then add another tomato, two more pieces of chicken, and a third tomato on the end.

10. Repeat with the remaining chicken and tomatoes on the remaining skewers.

11. If there are additional chunks of chicken left over, place them on another skewer and cook with the rest.

12. Spray a large grill pan with non-stick cooking spray (or brush with a neutrally flavored oil with a high smoke point) and set over medium-high heat.

13. Once hot, add the skewers to the grill pan and cook for 4-5 minutes, or until they release easily from the surface.

14. Flip each skewer and cook on the remaining side for another 4-5 minutes. Sear the remaining sides for 1 minute each.

15. Make sure chicken is cooked until an internal temperature of 165F is reached.

16. Transfer the skewers to a platter and set aside. Add the lemon halves to the hot grill pan and press down on each with a spatula.

17. Heat until the exposed surface is warm and nicely browned, approximately 2 minutes.

18. Remove from heat and squeeze the warm lemon halves over the chicken skewers right before serving. Enjoy!
