Grilled Pork Chops

Ingredients

4 bone-in center cut pork chops
2 tablespoons extra virgin olive oil
1 teaspoon smoked paprika
2 teaspoons salt
1 teaspoon black pepper

Instructions

Heat an outdoor grill to high heat, about 500°F.

Pat 4 bone-in center cut pork chops dry with paper towels if needed. Rub both sides of each chop with 2 tablespoons extra virgin olive oil.

In a small bowl, stir together 1 teaspoon smoked paprika, 2 teaspoons salt, and 1 teaspoon black pepper. Sprinkle the seasoning mix evenly over both sides of the pork chops and rub it in.

Place the chops directly over high heat. Grill for 2 minutes per side to sear.

Remove the chops to an upper rack or to a spot with indirect heat to finish cooking.

Move the chops to indirect heat or an upper rack. Reduce the grill burners to medium, close the lid, and continue to cook for about 15 minutes, or until the internal temperature reaches 145°F as measured with a meat thermometer. Actual cooking time will depend on the heat of your grill and the thickness of your pork chop.

Remove from the grill and let rest for 5 to 10 minutes before serving.
