Ground Beef and Cabbage Dinner

Ingredients

1 large onion 2 cups water 1 cup rice 2 tablespoons extra virgin olive oil 2 teaspoons minced garlic 1 ½ pounds ground beef 8 cups shredded green cabbage 1 ½ teaspoons sea salt, to taste ground black pepper, to taste

Instructions

1. Peel and dice onion.

2. Place water in a saucepan and cook rice as directed on package. When rice is done, remove from heat and keep covered.

3. Heat oil, in a dutch oven or large soup pot, over medium-high heat. Add onions and cook for 3-5 minutes, or until soft.

4. Add garlic and ground beef. Cook beef until no longer pink, about 8-10 minutes.

5. Add in all the cabbage. You will need to pack it down to get it all in. Add salt and pepper and cover.

6. Cook for 30-40 minutes, stirring occasionally, until cabbage is wilted down and tender. Taste and adjust seasoning.

7. Serve ground beef and cabbage over rice and enjoy!
