Hamburger Soup

Ingredients

½ onion 1 stalk celery 2 carrots 2 medium russet potatoes ½ pound ground beef ¼ cup extra virgin olive oil, or avocado oil 2 teaspoons minced garlic ½ teaspoon sea salt, to taste ¼ teaspoon ground black pepper, to taste 3 tablespoons cassava flour 2 cups beef broth 14 ounces full fat coconut milk

Instructions

1. Peel and dice onion, celery, and carrots. Peel and cube potatoes.

2. Brown ground beef in a skillet over medium-high heat, then set aside.

3. Heat oil in a stockpot over medium-high heat. Add garlic, onion, celery, carrots, salt, and pepper and sauté for 4-6 minutes, until vegetables begin to soften.

4. Make a roux by sprinkling in flour while continuously stirring for about two minutes.

5. Slowly whisk in beef broth. Add coconut milk and potatoes, then bring to a boil.

6. Add ground beef back to the pot, lower heat, and let simmer for 8-10 minutes, until potatoes are tender and beef is warmed through.

7. Remove from heat and season with salt and pepper, as needed. Serve and enjoy!
