Herb Crusted Pork Loin

Ingredients

9 cloves garlic 2 teaspoons lemon zest, preferably fresh 2 sprigs fresh rosemary 12 sprigs fresh thyme ½ teaspoon sea salt ½ teaspoon ground black pepper ½ teaspoon paprika 3 ½ pounds pork center loin, or pork sirloin plastic wrap, optional

Instructions

1. Peel garlic. Zest lemon.

2. Blend spices in a small food processor or spice grinder or grind in a mortar and pestle.

3. Rub spices evenly over entire roast.

4. Wrap the roast in plastic wrap, place in your fridge, and let marinate for four hours or overnight (optional).

5. Preheat oven to 350F.

6. Place roast fat side up on a roasting pan. Cook for 20 minutes per pound, until internal temperature reaches 160F.

7. Remove roast from oven and let rest 5-10 minutes before serving.
