Homemade Bangers

Ingredients

1 pound ground pork ½ teaspoon dried thyme ½ teaspoon rubbed sage ¼ teaspoon ground mace ⅛ teaspoon ground nutmeg ⅛ teaspoon ground ginger 1 teaspoon sea salt 1 tablespoon extra virgin olive oil water, as needed

Instructions

1. Mix ground pork, herbs, and spices in a small bowl. Mix with clean hands and make sure the spices are blended well. Form links or patties.

2. Heat a skillet (cast iron is great here) over medium-high heat. Add cooking fat to skillet. Add bangers to skillet.

3. Cook on the first side for approximately 3 minutes or until you can see the meat cooking on the edges and the underneath looks a little browned.

4. Rotate a quarter turn and sear another 3 minutes. Turn the sausages again another quarter turn and continue cooking another 3 minutes.

5. Turn one final time and add a couple tablespoons of water and steam for the final 3 minutes. Make sure bangers have an internal temperature of 160F.
