Homemade Coconut Butter

Ingredients

9 ounces coconut flakes 2 tablespoons coconut oil, optional

Instructions

1. Dump shredded coconut into high speed blender.

2. Turn on blender, starting at high speed and ending on low speed. Use tamper, if available, to keep the coconut moving.

3. The mixture may start to steam as it heats up. If the coconut does not start to break down after a minute, you can add coconut oil by the tablespoon until it starts to turn to ‘butter.’  The longer you blend it, the smoother the butter will be. If you use a food processor, you will need to frequently stop to let the motor cool down and scrape down the sides.

4. Pour or spoon into a jar and enjoy!
