Honey Lime Chicken and Tomato Skewers

Ingredients

1 tablespoon cilantro 1 tablespoon minced garlic 3 tablespoons lime juice ¼ cup coconut aminos 3 tablespoons honey 1 ½ tablespoons extra virgin olive oil 1 ½ teaspoons sriracha, optional ⅛ teaspoon red pepper flakes, optional 1 ½ pounds chicken breasts 16 ounces cherry tomatoes 1 avocado

Instructions

1. Mince the cilantro.

2. Combine cilantro, garlic, lime juice, coconut aminos, honey, olive oil, sriracha, and red pepper flakes in a shallow dish and mix thoroughly.

3. Cut up chicken breasts into one inch cubes and place a single layer in the marinade for at least 3 hours, or preferably overnight.

4. If using wooden skewers, soak them in water for at least 30 minutes, or up to overnight.

5. Skewers can be cooked on the grill or in the oven. When ready to cook, preheat grill to high heat or preheat oven to 350F.

6. Skewer chicken and cherry tomatoes on separate skewers. Peel, pit, and slice avocado.

7. If using the grill, grill skewers for 6-8 minutes each side. If using the oven, place skewers on a baking sheet and cook for about 15-20 minutes (or until cooked through).

8. Make sure chicken is cooked until an internal temperature of 165F is reached.

9. Serve with sliced avocado.
