Hummus

Ingredients

1 cup dried chickpeas 2 tablespoons apple cider vinegar 5 lemons 1 tablespoon garlic powder 1 teaspoon minced garlic 6 tablespoons tahini 2 tablespoons extra virgin olive oil ⅛ teaspoon cayenne pepper ½ teaspoon sea salt, or to taste

Instructions

1. Place chickpeas and apple cider vinegar in a large, non­reactive bowl well covered with filtered water. Soak chickpeas for at least 8 hours. Drain.

2. Transfer to a pot and bring to a boil. Cover chickpeas with water and simmer for 6­-8 hours or until chickpeas are tender.

3. Allow to cool, reserving at least 1 cup of the cooking liquid.

4. Juice lemons.

5. Place strained chickpeas, garlic powder, minced garlic, tahini, olive oil, some of the lemon juice, and cayenne in your food processor with the s-­blade.

6. Blend until smooth. Add some cooking liquid if the hummus is too thick.

7. Adjust seasoning by adding sea salt and extra lemon juice as needed.
