Italian Pork Chops

Ingredients

1 ½ pounds pork chops 1 large onion 1 ½ teaspoons sea salt, to taste ground black pepper, to taste 1 tablespoon extra virgin olive oil 12 ounces diced tomatoes 5 teaspoons minced garlic ¾ teaspoon dried oregano ⅓ teaspoon ground sage 1 teaspoon dried basil 1 tablespoon dried thyme

Instructions

1. Trim fat from pork chops. Peel and dice onion.

2. Heat a heavy pan on high until warm. Add oil and heat until shimmery, about 20 seconds.

3. Season pork chops with salt and pepper and brown on each side

4. For 1 inch pork chops: Sear chops in skillet for 7 minutes on each side, until an internal temperature of 145F is reached.

5. For ¾ inch pork chops: Sear chops in skillet for 5 minutes on each side, until an internal temperature of 145F is reached.

6. For ½ inch pork chops: Sear chops in skillet for 2-3 minutes on each side, until an internal temperature of 145F is reached.

7. Reduce heat to medium-low and add onions.

8. Stir onions and flip pork chops after 2 minutes on each side.

9. Add tomatoes, garlic, and spices. Simmer about 5-8 minutes, until tomatoes are soft and sauce has set up.
