Jamaican Jerk Chicken Lettuce Cups

Ingredients

For the lime mayo: 1 lime 1 teaspoon minced garlic ½ cup mayonnaise ½ teaspoon garlic powder sea salt, to taste For the chicken: 1 small lime 1 red bell pepper 1 teaspoon dried thyme 1 pound cooked chicken 2 tablespoons coconut oil 1 tablespoon jerk seasoning, plus more to season to your preference For tacos: 1 head butter lettuce

Instructions

1. For the lime mayo: Juice and zest lime. In a small bowl, combine all ingredients.

2. If possible, prepare a few hours to a day before, cover, and chill in fridge to allow flavors to meld.

3. For the chicken: Juice the lime. Finely dice bell pepper. Crush thyme. Shred the chicken.

4. Melt coconut oil in a pan over medium heat. Add jerk seasoning, and sauté for a minute to release the flavors.

5. Add the shredded chicken and cook for 2-3 minutes to warm through. Add thyme and adjust seasoning to your preference.

6. Turn off heat. Stir in lime juice.

7. For tacos: Separate the head of lettuce into whole leaves.

8. Spoon some chicken onto the center of each lettuce wrap. Top with diced bell pepper and lime mayo. Roll up and serve immediately.
