Jamaican Jerk Pork Wraps

Ingredients

For the mayo: 1 lime 1 teaspoon minced garlic ½ cup mayonnaise ½ teaspoon garlic powder sea salt, to taste For the wraps: ½ teaspoon dried thyme 2 red bell peppers 2 mangoes 1 orange 1 lime 1 head butter lettuce 1 pound shredded pork 2 tablespoons jerk seasoning

Instructions

1. For the mayo: Juice and zest lime.

2. In a small bowl, combine all ingredients. If possible, prepare a few hours to a day before, cover, and chill in fridge to allow flavors to meld.

3. For the wraps: Crush the thyme. Finely dice the red peppers. Peel, seed, and finely dice the mangoes. Juice the orange. Juice the lime.

4. Wash and separate butter lettuce into whole leaves.

5. Reheat shredded pork on stovetop and add orange juice, jerk seasoning, and thyme. Allow to cook for 10 minutes or longer on low so infuse flavors.

6. Stir lime juice into meat.

7. Spoon some meat onto the center of each wrap. Top with diced bell pepper, mango, and lime mayo. Roll up and serve immediately.
