Lentil and Swiss Chard Soup

Ingredients

1 ½ bunches swiss chard 1 onion 2 medium potatoes 1 ½ tablespoons extra virgin olive oil ¾ cup lentils 6 cups chicken broth, or beef broth 1 ½ tablespoons lemon juice ½ teaspoon sea salt, or to taste ½ teaspoon ground black pepper, or to taste

Instructions

1. Strip swiss chard leaves from stems and chop roughly. Peel and finely dice onion. Peel and cut potatoes into chunks.

2. Heat olive oil in a dutch oven or deep pot. Add onions and cook for 5 minutes, or until translucent.

3. Add lentils and swiss chard and cook for 1-2 minutes to allow chard to wilt slightly. Pour in broth and bring to a boil.

4. Turn soup down to a simmer and cook for 15 minutes. After 15 minutes, add potatoes and simmer for 15 minutes more, or until potatoes are tender and lentils are cooked.

5. Take soup off the heat and add lemon juice. Ladle into bowls and serve immediately.
