Mango Bok Choy Slaw

Ingredients

2 bunches baby bok choy 2 carrots ¼ head red cabbage 2 mangoes, ripe ½ small jalapeño pepper ½ bunch cilantro 3 limes 3 tablespoons honey 2 tablespoons sesame oil 1 tablespoon coconut aminos

Instructions

1. Thinly slice the baby bok choy. Shred the carrots and cabbage. Peel, pit and dice the mango. Seed and finely chop the jalapeño. Chop the cilantro.

2. Combine bok choy, carrot, cabbage, mango, jalapeño and cilantro in a large bowl.

3. In a small bowl, juice the limes. Whisk in honey, sesame oil, and coconut aminos until well combined.

4. Toss dressing into salad, cover and allow to marinate in the fridge for a few hours, or overnight.
