Maple Braised Butternut Squash

Ingredients

1 large butternut squash 2 tablespoons fresh thyme, or fresh rosemary or sage chiffonade 4 tablespoons pure maple syrup 3 tablespoons extra virgin olive oil ¾ teaspoon sea salt

Instructions

1. Preheat oven to 375F.

2. Peel, seed, and cut squash into ½ inch cubes. Mince thyme.

3. Toss butternut squash with maple syrup, olive oil, and salt. Place in single layer on a rimmed baking sheet and sprinkle the thyme over the top.

4. Bake for 15-20 minutes, until the squash is fully cooked and just barely starting to caramelize (and before the maple syrup starts to candy).

5. Toss with pan juices, then transfer to a serving dish.
