Marinated Green Beans

Ingredients

1 pound green beans 2 teaspoons sea salt, plus more to taste 3 tablespoons red wine vinegar 2 tablespoons extra virgin olive oil 2 tablespoons Dijon mustard 1 teaspoon honey ground black pepper, to taste

Instructions

1. Wash and trim the green beans.

2. Fill a large saucepan with water and add the salt. Bring to a boil and add the green beans. Cook for 3-4 minutes, or until they can easily be speared with a fork. Drain water and plunge green beans into a bowl of ice water. This will stop them from cooking and help them stay crunchy.

3. In a large mixing bowl add vinegar, olive oil, mustard, and honey.

4. Whisk vigorously to combine thoroughly. Adjust the marinade to suit your palate. Season with sea salt and fresh ground pepper to taste.

5. If you prefer less tang, whisk in a bit more honey and/or olive oil. When your tastebuds are happy, add green beans and toss well.

6. Cover bowl with plastic wrap and place in the fridge for at least three hours or even overnight. Remove from the fridge one hour before serving to reach room temperature.
