Marinated Veggie Skewers

Ingredients

8 skewer sticks 1 large zucchini 4 ounces cremini mushrooms 10 ounces cherry tomatoes 1 red onion 1 green bell pepper 1 red bell pepper 1 pound baby red potatoes 4 cloves garlic ¼ cup extra virgin olive oil 1 tablespoon tamari 1 tablespoon sriracha 1 tablespoon balsamic vinegar 1 teaspoon agave nectar ¾ teaspoon sea salt, plus more to taste 1 teaspoon ground black pepper

Instructions

1. If using wooden skewers, soak in water for 30 minutes before using.

2. Cut zucchini into 1/2 inch rounds. Wash mushrooms and tomatoes. Peel and cut onion into chunks. Deseed and cut peppers into chunks. Peel and crush the garlic.

3. Boil potatoes until soft.

4. Prepare and mix all ingredients in a large bowl and let marinate for at least 30 minutes, but up to 2 hours.

5. Preheat the grill to medium high heat.

6. Skewer veggies.

7. Grill on medium heat, turning, until marked and tender, 12 - 15 minutes (8 - 10 minutes for cherry tomatoes and boiled potatoes).
