Mashed Cauliflower

Ingredients

1 head cauliflower 3 cloves garlic 1 cup chicken broth

Instructions

1. Cut cauliflower into florets. Peel garlic.

2. Place pot with broth and cauliflower on the stove. Cover and bring to a boil over high heat.

3. Reduce heat to low and simmer for 20 minutes.

4. Add cloves of garlic to the pot and simmer 10 more minutes until cauliflower is very soft.

5. Drain. Using an immersion blender or food processor, blend cauliflower to form a thick puree and season to taste.
