Minted Zucchini

Ingredients

2 zucchinis 2 tablespoons fresh mint leaves 1 tablespoon coconut oil

Instructions

1. Halve zucchini and slice into ¼ inch semicircles. Chop mint.

2. Heat a skillet over medium heat. Add coconut oil and zucchini.

3. Sauté zucchini until soft and just starting to brown, about 5-6 minutes, stirring frequently.

4. Add mint and continue to cook for 1 minute.
