Mixed Berry Quinoa

Ingredients

2 cups quinoa 4 cups almond milk 4 tablespoons honey 1 teaspoon cinnamon, optional 3 cups mixed berries, fresh or frozen

Instructions

1. Place quinoa in a fine mesh sieve and rinse well.

2. Place almond milk in a large saucepan and bring to a boil.

3. Once almond milk is boiling, add quinoa. Turn heat down to bring back to a simmer. Cook for 18-20 minutes until quinoa is tender and has a creamy porridge-like consistency.

4. Remove pan from heat and let stand for 5 minutes to thicken up.

5. Add honey and cinnamon. Taste and adjusting amount of sweetness to your liking.

6. Divide quinoa among bowls and top with berries. Enjoy!
