Moroccan Rice Pilaf+

Ingredients

1 cup long grain rice 1 medium onion 1 tablespoon extra virgin olive oil 1 teaspoon cumin ¼ teaspoon cayenne pepper 1 teaspoon paprika 1 ½ cups chicken broth 1 teaspoon coarse sea salt ½ cup raisins ½ cup sliced almonds

Instructions

1. Rinse rice well. Peel and finely chop the onions.

2. Melt butter in a pan over medium heat and add onions. Cook until onions translucent but are not browned.

3. Add cumin, cayenne pepper, paprika and rice.

4. Stir well so that the rice is evenly coated with oil.

5. Cook for 3-4 minutes.

6. Transfer to rice cooker (or cook on the stove with lid).

7. Stir in broth, salt, and raisins, and simmer on low until rice is light and fluffy.

8. Fold in sliced almonds, and serve.
