Nut Free Chewy Granola Bars

Ingredients

½ cup coconut flakes 2 eggs 1 teaspoon vanilla 1 tablespoon honey ⅛ teaspoon sea salt ⅛ teaspoon cinnamon ½ cup pumpkin seeds ⅓ cup dried cranberries ½ cup unsweetened shredded coconut ⅓ cup sunflower seeds 3 tablespoons sesame seeds ⅓ cup dried currants, or raisins ¼ cup mini chocolate chips

Instructions

1. Grease a 9x9 inch pan. Preheat oven to 350F. Lightly chop coconut flakes.

2. Toast the coconut flakes in a skillet over medium-high heat for 6 - 7 minutes, until lightly browned, if desired.

3. Mix eggs, honey, vanilla, salt and cinnamon to combine.

4. Combine all remaining dry ingredients. Add egg mixture and mix to fully combine.

5. Pour into pan and press down evenly.

6. Bake for 18 minutes. Let cool completely then cut into bars or squares.
