Orange Glazed Ham

Ingredients

½ orange ½ cinnamon stick 1 cup orange juice ½ cup cane sugar ¼ teaspoon ground black pepper, optional ¼ teaspoon ground cloves 4 pounds ham

Instructions

1. Preheat oven to 350F. Zest the orange.

2. In a saucepan, over medium heat, combine the cinnamon stick, orange juice, orange zest, sugar, black pepper, and ground cloves.

3. Stir frequently, and allow to simmer for 15-20 minutes or until the mixture is a syrup that coats the back of a spoon.

4. While the sauce simmers, use a sharp knife to remove the skin and all but 1/2 inch of fat from the outside of the ham.

5. Score the fat criss-crossed to make a diamond pattern over the entire fatty part of the ham.

6. Place the ham in a large roasting pan, fat side up.

7. If your ham is labeled 'fully cooked', heat for 8-10 minutes per pound, or to an internal temperature of 140F.

8. If the ham is labeled 'cook before eating,' heat to an internal temperature of 160F. Baste every 20 minutes or so with the sauce.

9. Allow the ham to rest out of the oven for 15 minutes before slicing across the grain into thin slices.
