Oven Baked Sweet Potato Fries

Ingredients

parchment paper 3 tablespoons extra virgin olive oil, or fat of choice 3 medium sweet potatoes 3 tablespoons arrowroot ½ teaspoon sea salt 1 teaspoon maple sugar, or brown sugar ½ teaspoon cinnamon, optional ½ cup ketchup, optional

Instructions

1. Preheat oven to 400F. Line a rimmed baking sheet with parchment paper.

2. Melt oil. Peel sweet potatoes and cut into French fry-like strips (4 to 6 inches long and 1/4 to 3/8 inch thick.)

3. In a bag or bowl, toss the sweet potatoes with the arrowroot powder to completely coat. Discard any arrowroot powder that didn’t stick to the sweet potatoes.

4. Toss the coated sweet potatoes with the melted oil and salt.

5. Arrange the sweet potato strips on the prepared baking sheet in a single layer, taking the time to separate the strips so they aren’t touching each other.

6. Bake for 15 minutes. then flip each strip over, and bake for an additional 10-15 minutes, until browned with crispy edges.

7. Sprinkle the warm fries with maple sugar and cinnamon, if desired, and serve. Or, serve with ketchup.
