1. On stove or in microwave, heat enough water to completely cover potatoes. Water should be hot but not boiling. Hot tap water can also be used.
2. While water is heating, scrub potatoes well. Slice potatoes in half and then cut into 1/4 inch thick slices. Stack slices and cut into fries.
3. Place fries in a large bowl and cover completely with hot water. Let soak for 30 minutes.
4. In the meantime, preheat oven to 375F.
5. In a small bowl combine salt, pepper, and garlic powder. Stir to combine and set aside.
6. Lay clean kitchen towels on a flat surface. When potatoes are done soaking, rinse them well and remove them to kitchen towel. Arrange them in a single layer.
7. Using another clean towel, thoroughly dry fries. The drier they are when they go in the oven, the crispier they will be.
8. Divide fries between 2 baking sheets. Make sure there is plenty of space; don't crowd the pan.
9. Drizzle with olive oil and sprinkle on half of the seasoning. Toss to coat completely, adding more oil if needed.
10. Place in oven and bake for 20 minutes. Stir halfway through. Fries should be tender after 20 minutes.
11. Turn heat up to 450F and bake for another 20 minutes, again, stirring halfway through.
12. Continue to bake until fries are golden and crisp. Keep a close eye on them towards the end so they don’t burn!
13. Remove fries from oven and sprinkle with remaining seasoning while hot. Enjoy!
