Paleo Prawn Cocktail

Ingredients

1 ½ tablespoons avocado oil ¾ pound shrimp 6 tablespoons mayonnaise 1 ½ tablespoons tomato paste 1 teaspoon chili powder, or to taste 2 tablespoons fresh parsley, optional

Instructions

1. Warm the oil over medium high heat.

2. Add the shrimp to the pan, and cook for 2 minutes. Then flip the shrimp over, and cook for an additional 2 minutes, or until opaque.

3. Meanwhile, mix the mayonnaise, tomato paste, and chili powder then fold through the prawns/shrimps.

4. Garnish with a sprig of parsley if desired.
