Peach Blueberry Cobbler

Ingredients

6 peaches ½ cup pecans 2 cups blueberries 1 lemon ½ cup coconut oil 1 tablespoon vanilla 2 cups almond flour 1 tablespoon cinnamon ½ teaspoon sea salt ¼ cup honey

Instructions

1. Peel and slice peaches. Chop pecans. Juice the lemon. Preheat oven to 375F. Melt the coconut oil and allow to cool.

2. Toss the fruit with the lemon juice and vanilla and put mixture in a 9x9 baking dish.

3. In a separate bowl, combine almond flour, pecans, cinnamon, salt, coconut oil, and honey.

4. Mix until well combined and then crumble topping over the fruit.

5. Bake for 45 minutes until crust is golden brown.
