Peach Cobbler

Ingredients

For the filling: 1 teaspoon coconut oil, (or butter for greasing the dish) 8 peaches ¼ cup honey 1 tablespoon arrowroot ¼ teaspoon nutmeg 1 teaspoon vanilla ¼ teaspoon almond extract For the topping: 1 cup almond flour ½ teaspoon sea salt ½ teaspoon cinnamon ¼ cup coconut sugar ½ cup coconut oil, or butter

Instructions

1. Preheat oven to 375F. Grease a 9x9 baking dish or large tart dish. Pit and slice peaches into eighths.

2. In a large bowl, toss the peach filling ingredients together until evenly combined.

3. For the crusty topping, place all ingredients into a food processor. Pulse until a loose mixture created - not uniform.

4. Spread peaches into the bottom of the greased baking dish.

5. Sprinkle topping over peaches using more or less to your preference. If you have extra topping leftover, it freezes well and you can sprinkle it onto a different fruit later.

6. Place dish on a baking sheet and bake for 30-35 minutes until bubbly and the top is slightly browned.
