Pizza - Pesto Pork with Pumpkin and Kale

Ingredients

1 bunch kale 1 tablespoon avocado oil, or bacon fat 1 pound ground pork 1 lemon 1 teaspoon minced garlic ½ cup extra virgin olive oil 1 bunch fresh basil 1 teaspoon sea salt ½ lemon 1 cup pumpkin puree

Instructions

1. Remove coarse stem from kale and chop finely.

2. Heat avocado oil or bacon fat in a skillet over medium high heat. Add the ground pork, breaking up in to bits, and cooking for 10-15 minutes, stirring, until no pink remains.

3. In the meantime, juice the lemon, placing juice and minced garlic in a food processor with olive oil, basil, and salt; pulse until almost smooth.

4. Add the kale to the skillet with the pork and continue cooking for a few minutes until kale is bright green and just wilted.

5. Turn off the heat and add the pesto to the skillet. Stir to combine.

6. Squeeze lemon into pumpkin puree (this will add a nice tartness to the 'sauce').

7. Spread pumpkin puree over prepared pizza crust. Top with pesto pork kale mixture and serve immediately.
