Pizza - Sausage, Broccoli Rabe, Garlic and Avocado

Ingredients

1 pound Italian sausage 1 bunch broccoli rabe, or other greens 2 avocados 1 tablespoon extra virgin olive oil, or bacon fat 1 teaspoon minced garlic 1 teaspoon sea salt, to taste ⅛ teaspoon red pepper flakes

Instructions

1. Remove sausage from casing. Wash and chop broccoli rabe finely. Peel, pit, and thinly slice avocado.

2. Sauté sausage in oil or bacon fat, using a wooden spoon to break meat apart into small pieces. When meat is brown, transfer to a plate.

3. Sauté broccoli rabe with minced garlic, sea salt, and red pepper flakes until they are bright green and tender.

4. Top pizza with cooked toppings, layer with sliced avocado, and serve.
