Pumpkin Bars

Ingredients

3 eggs 1 cup coconut butter ½ cup coconut sugar 1 ½ teaspoons cinnamon ½ teaspoon fresh ginger ¼ teaspoon ground cloves ¼ teaspoon nutmeg ½ teaspoon sea salt 1 teaspoon baking powder 2 cups pumpkin puree

Instructions

1. Preheat oven to 350F. Allow eggs to come to room temperature. Soften coconut butter by placing it in a jar of hot water, if necessary.

2. Whisk together eggs, coconut sugar, spices, salt, and baking powder. Add pumpkin and stir together until smooth.

3. Stir in coconut butter until thoroughly combined.

4. Pour into a parchment paper lined pan and even out with a spatula.

5. Bake for 20-25 min or until golden brown.

6. Take out of oven and allow to cool. If eaten hot, they will be soft. If allowed to cool to room temperature, they will be more solid and can be eaten by hand.
