Ingredients

1 red bell pepper 2 carrots 12 ounces roast beef ½ cup mayonnaise 2 tablespoons Dijon mustard 4 dill pickle spears 4 mandarin oranges

Instructions

1. Slice bell pepper into strips. Cut carrots into sticks. Slice roast beef.

2. In a bowl, mix mayonnaise and Dijon mustard. Set aside.

3. Lay out roast beef in 2 slice layers. Spread mayo dip onto roast beef (or add mayo to separate containers with a lid if you prefer to use it for dipping).

4. Top roast beef with bell pepper strips. Roll up tightly, place seam side down, and cut in half.

5. Divide roll-ups, pickles, carrots, and oranges between lunch boxes.
