Roasted Broccoli

Ingredients

3 heads broccoli 1 tablespoon lemon zest, preferably fresh ¼ bunch fresh parsley ¼ cup extra virgin olive oil 2 tablespoons minced garlic ¼ teaspoon sea salt

Instructions

1. Preheat the oven to 450F.

2. Cut broccoli into florets and cube stems. Zest lemon by finely grating it. Juice lemon if desired and set aside. Finely chop parsley.

3. In a casserole dish, toss the broccoli florets and stems with the olive oil, garlic, lemon zest, and salt.

4. Roast for 25 minutes or more, until the broccoli is fully cooked, (it depends on how big your florets and how soft you like them), stirring once half-way through cooking.

5. Remove from the oven and toss with the fresh parsley.

6. Optional: For a little extra zing, reserve the juice from the lemon and pour over the broccoli right before serving.
