Roasted Broccoli Rabe and Tomatoes

Ingredients

parchment paper 2 bunches broccoli rabe 10 ounces cherry tomatoes 2 tablespoons extra virgin olive oil ¼ teaspoon dried thyme ½ teaspoon garlic powder 1 ½ teaspoons sea salt ¼ teaspoon ground black pepper

Instructions

1. Preheat oven to 400F. Line a baking sheet with parchment paper. Cut the tough lower stems off the broccoli rabe and discard. Halve the cherry tomatoes.

2. Spread the vegetables evenly on the baking sheet. Drizzle with olive oil. Sprinkle the thyme, garlic powder, sea salt, and pepper generously over the vegetables.

3. Bake for about 15-20 minutes or until broccoli rabe is tender.
