Roasted Butternut Squash

Ingredients

parchment paper 2 tablespoons coconut oil 1 butternut squash 2 teaspoons fresh thyme ⅛ teaspoon sea salt, to taste

Instructions

1. Preheat oven to 425F. Line a baking sheet with parchment.

2. Melt coconut oil. Peel squash and cut into 1 ½ inch pieces. Mince thyme.

3. Toss oil with butternut squash and thyme. Spread out onto prepared baking sheet.

4. Place squash in oven. Bake for 30-35 minutes, until slightly browned and tender.

5. Shake pan (and flip squash chunks if necessary) every ten minutes during baking to ensure even browning.
