Roasted Curried Carrots

Ingredients

2 pounds carrots 1 tablespoon extra virgin olive oil 2 tablespoons honey 1 tablespoon curry powder 12 sprigs fresh thyme sea salt, to taste ground black pepper, to taste

Instructions

1. Place top oven rack in the center position and preheat oven to 400F. Line a large, rimmed baking sheet with parchment paper or a silicone baking sheet. Set aside.

2. Peel carrots and cut them on the diagonal.

3. Add carrots, olive oil, honey, curry powder, and fresh thyme to a large mixing bowl. Sprinkle with salt and pepper, to taste. Toss until well combined.

4. Pour seasoned carrots on the prepared sheet pan and spread into a single layer without overcrowding.

5. Roast for 20-25 minutes, turning carrots once halfway through cooking. Carrots should be crisp-tender and nicely browned when ready.

6. Remove from oven and transfer to a serving bowl or platter. Enjoy!
