Roasted Dijon Chicken

Ingredients

¾ pound chicken drumsticks ¾ pound chicken thigh ¾ pound chicken breast sea salt, to taste ground black pepper, to taste 1 onion ½ bunch chives, optional 1 tablespoon extra virgin olive oil ¾ cup white wine ¾ cup chicken broth 2 tablespoons Dijon mustard

Instructions

1. Preheat oven to 400F. Pat chicken dry and season generously with salt and pepper. Peel and finely slice the onion. Chop the chives.

2. Heat oil in a heavy skillet over medium-high heat until it shimmers. Working in small batches, brown chicken, skin side down.

3. When well browned, turn the chicken to brown the other sides in the same fashion. Transfer chicken to a roasting dish and set aside.

4. Add onions, wine, and broth to pan juices and simmer, scraping up any brown bits, until reduced by half.

5. Whisk mustard into the sauce, and pour sauce over chicken.

6. Roast in oven until just cooked through, 20-30 minutes. The chicken is fully cooked when the chicken pieces reach 165F at their thickest part.

7. Remove chicken from oven, season with salt and pepper as needed, and garnish with chives.
