Roasted Parsnips

Ingredients

6 parsnips 2 tablespoons extra virgin olive oil ⅛ teaspoon sea salt, to taste ⅛ teaspoon ground black pepper, to taste

Instructions

1. Preheat oven to 420F. Wash and cut the parsnips into 1/2 inch pieces.

2. Toss with olive oil, salt, and pepper to taste.

3. Spread parsnips out on a parchment paper-line baking sheet.

4. Roast for 15-20 minutes, or until parsnips are lightly browned and tender.
