Roasted Peppers

Ingredients

2 red bell peppers 2 yellow bell peppers 2 tablespoons extra virgin olive oil 2 teaspoons balsamic vinegar ⅓ teaspoon sea salt ½ teaspoon honey 1 teaspoon dried oregano

Instructions

1. Heat a grill to high. If you'd prefer to do this indoors, you can simply sear the peppers over the open flame of your stove.

2. Grill whole peppers, turning often, until charred all over, about 10 minutes. Put in a bowl and cover with a towel to steam.

3. Meanwhile, mix olive oil, vinegar, salt, and honey together.

4. Peel peppers, stem, and slice; discard skins. Mix peppers with vinegar mixture.

5. Sprinkle oregano over the top and serve.
