Roasted Plantains

Ingredients

6 brown plantains, ripened 4 tablespoons extra virgin olive oil 2 teaspoons sea salt ½ teaspoon paprika

Instructions

1. Preheat oven to 400F.

2. Peel plantains and cut on a diagonal about 1/2 inch thick.

3. Place in a large bowl; toss with oil, sea salt, and paprika.

4. Line a rimmed baking sheet with silpat or parchment paper and arrange the plantain pieces on the baking sheet in a singer layer.

5. Bake for 20 minutes, using a spatula to flip pieces over halfway through cooking.
