Roasted Potatoes

Ingredients

1 pound baby Yukon gold potatoes, or red potatoes 5 cloves garlic 2 tablespoons extra virgin olive oil 1 ½ teaspoons sea salt, to taste 1 teaspoon ground black pepper, to taste

Instructions

1. Preheat oven to 450F. Cut potatoes in half. Peel and chop garlic.

2. Place potatoes, garlic, and oil in a shallow baking dish just big enough to fit the potatoes in a single layer. Toss to coat, then spread out in the baking dish.

3. Season generously with salt and pepper and bake on the center rack of the oven for about 30-40 minutes, until tender and lightly golden-brown.
